Paolo is the Project Officer with the Llanelli Multicultural Network.
Though not a trained chef, Paolo owned and ran a catering business in West London for several years.
Two of his passions are travel and food. He has lived in India and travelled to many countries in Europe and the Middle East, all the time learning about the cuisine of those countries.
He has a passion for using fresh and interesting ingredients. He teaches cooking to community groups, emphasising how to create tasty, easy to make food on a budget.
Paolo’s long term ambition is to put together a cookery book that combines travel and food, with some of the interesting recipes from his own travels, and some from members of the Multicultural Network from around the World.
Information about the Llanelli Multicultural Network can be found at www.lmcn.com.

It is said that the French cook with precision, and that the Italians cook with passion! I suppose its from my Italian heritage that I get my love of food and cooking.

The first time I visited Germany was in May 1972. In those days its was West Germany, after the country was divided into West and East after the Second World War.

Paolo hasn't prepared this month's recipe but has been sent one by LMCN member Morisa Morita, who comes originally from Brazil. Don’t forget that the next Olympics will be Rio de Janiero, Brazil in 2016!, so here’s a small taste of Brazil until then!

Here's a really quick and simple dish that can be made for a special occasion or for the family.
I had this on a visit to Italy at a small town on the Mediterranean coast called San Remo, its so easy to make that I feel a bit of a cheat when I give to dinner guests.

Here's a nice tasty winter recipe from Punjab India feeds 3-4 persons.
Its very cheap to make, and very tasty!
In the area we have lots of food co-ops running , the basic ingredients are to be found in most of their vegetable bags and it;s a good way to support our local farmers and use local produce.
