Punjabi Aloo Gujar Mattar, or potato, carrot and peasBy Paolo Piana Here's a nice tasty winter recipe from Punjab India feeds 3-4 persons. Its very cheap to make, and very tasty! In the area we have lots of food co-ops running , the basic ingredients are to be found in most of their vegetable bags and it;s a good way to support our local farmers and use local produce. Ingredients: • Medium onion(finely chopped) • 2 carrots(diced) • 2 medium potatoes(diced) • Large cup of peas(fresh or frozen) • Tin of chopped tomatoes • Small chilli or ½ tea spoon chilli powder • teaspoon cumin seeds • ½ Garam masala • ½ teaspoon turmeric • Salt • 2 cloves of chopped garlic • Teaspoon of chopped fresh ginger. • Vegetable oil Method • Put oil in to a pan on medium heat • Put in onion cumin seeds..cook until onion browns • Add ginger and garlic and potatoes and cook gently for a few minutes. • Add turmeric and chilli and mix for 2 minutes • Add salt and remaining spices and mix in tomatoes. • Add carrots and peas. • Cook on a gentle heat until carrots and potatoes are soft Serve with Indian bread(chapatti, nan ) or with basmati rice.
