Fit 4 Fun Recipe of the Month "Fruit Pancakes"
Fit 4 Fun believe it’s important to involve children as much as possible in cooking daily meals and the aim of these recipes is to get all the family into the kitchen to prepare some healthy and nutritious dishes, which everyone can enjoy!
What you need (Pancakes)
- 4 oz flour (plain or self-raising)
- 2 eggs
- ½ pt milk or 7fl oz milk and 3fl oz water mixed
- 2 oz butter (melted and 2 tablespoons added to the batter). Use for cooking the pancakes
To Serve
- Fruit of your choice e.g. bananas, strawberries
Equipment
- Bowl
- Non-stick frying pan
- Sieve
- Ladel
- Spoon
- Knife
- Whisk
What you do
1. Sieve the flour into a large bowl.
2. Add the eggs and milk and whisk to make a batter.
3. Melt the butter in the pan and add 2 tbsp to the batter.
4. Use the ladle to scoop the batter into the hot pan.
5. Cook for about 2 minutes until the edges are brown and the middle starts to bubble. Turn over and cook for another 2 minutes.
6. Serve with the fruit of your choice.

Take care! Make sure an adult helps with the hot pan and knife
