It's a dog's life

Place confirmed inthe London Marathon 2011 and I'm running as part of Team Slimming World and their charity SMILES (Slimmers Making It a Little Easier for Someone)who this year are raising money for theNSPCC.  Training started afew weeks ago and all is going well.

Saturday 6th November

23 mile training runthat took in many hills to build muscle and increase stamina, my route went from Llanelli and alongthe A484 to Kidwelly, through the town and onto the bypass where I picked up the Mynyddygarreg Road upto Four Roads, the first of what I affectionately call "Cardiac"hills, before turning right atMeinciau and heading down into Pontiets and back up the other side towards Cynheirdre and Five Roads beforedropping back down the hill for the last 4 miles to home.Anyway at Cynheidre,3 hours and 30 mins into the run, while passing a one of a handful of houses, I was joined on myrun by the most delightful white and black Collie who insisted on running withme for miles,he was at my heel and then running across the road in his excitement, I was left trying to flag downdrivers to get them to slow downbut only succeeded in making them think this delightful pooch was mine..........

Thankfully at FiveRoads I saw a bus stop and if a stroke of luck were needed, a bus was justpulling up,much to the mirth ofthe bus driver who incidentally said he sees me running most days and wondered when I'd need a lift, Ihad to protest that I dodn't need a lift but rather saw this as the only way Icould escape the affections of this delightful dog, who not only tried to follow me onto the bus, but then proceeded to run after it after we pulledaway......anyway, I hope he made it home safely, really do as he was adelightful animal.

Recipe of the week is

Home made and fatfree coated chicken - just like KFC but without all the grease

  1. Cook chicken breast –boil or steam – doesn't matter

  2. Wholemeal breadcrumbsmixed with spices to personal taste – I use black pepper, chilli flakes,a little cayennepepper, cumin, ginger, mustard etc – be creative with the spices.

  3. Lay chicken pieces ina deep baking tray – I prefer pyrex ones

  4. Coat cooked chickenwith chicken Bovril (liquid version from the jar) mixed with an egg

  5. Coat chicken with theseasoned breadcrumbs and simply bake in the oven for about 15 mins on 180degrees.

  6. Play with theseasoning I love spicy food and others prefer it a little milder, you'll soonget the

  7. measure of what suitsyour taste.

  8. Serve with a sidesalad or baked potato for a delicious and super healthy meal.
